hight protein Cottage Cheese Pancakes
These pancakes are incredibly moist and flavorful thanks to the cottage cheese. They’re a great source of protein and fiber, and they come together with just a few simple ingredients. I can’t get enough of this recipe!
Ingredients (for 6-7 mini pancakes):
2 eggs
6 oz. cottage cheese
1 banana, mashed
1 tsp vanilla extract
1/2 tsp Cinnamon (optional)
1/2 cup organic pastry flour whole wheat
1/2 tsp baking powder
1/4 cup milk (almond or your choice)
blueberries (OR fruit of your choice)
Instructions:
In a bowl, whisk the 2 eggs and combine it with the mashed banana, cottage cheese, cinnamon and vanilla extract. Mix until well blended.
Stir together the wet ingredients with the flour and baking powder. Gradually add the milk, mixing until the batter is smooth. Gently fold in the blueberries.
Heat a pan over medium heat and lightly grease it with butter. Reduce the heat to medium-low and scoop the batter into the pan.
Cook the pancakes for about 2-3 minutes on each side, CoverING the pan with a lid to ensure they’re cooked through.
*Handle them carefully, as they’re quite delicate!
Serve with butter, maple syrup or honey.

NOTES:
* I made these pancakes with whole wheat flour, however, you could easily make them with all-purpose flour oat flour, or quick-cooking oats if you wanted to increase the fiber content a little bit. These cottage cheese pancakes also store really well in the fridge so they are perfect as a meal prep idea for quick and easy weekday breakfasts.
